Banana Bread (http://spinningsugar.wordpress.com/2007/03/13/worlds-best-banana-bread-no-kidding/). For this quick bread I mixed 1:1 GM Purasnow Cake Flour (8.2% Protein) and an All Purpose flour I bought at Henry's. The banana bread was very good with great texture. Next time I will mash the bananas just a bit more.
Compared to normal flour, this is must lighter and didn't tend to bake unevenly.
